Light Minestrone

Serves: 6

Ingredients:
1 package            MO' BEEF VEGGIE BURGER, cubed
1/2                      medium head of cabbage, sliced
1                         medium onion, chopped
1/4 cup                fresh parsley (optional)
1/4 tsp.                garlic powder
1 tsp.                   oregano
1/4 tsp.                pepper
1 tbs.                   oil
5 cups                 water
1                         16-oz. can of tomatoes, chopped (or about 3 medium fresh tomatoes)
1/4 cup                uncooked spaghetti, broken into small pieces
1                         medium zucchini, sliced
1                         25-oz. can red kidney beans

Preparation:
1. In a large pot, sauté cabbage, onion, parsley, garlic powder, oregano and pepper in oil, stir often (5 minutes).
2. Add water, MO' BEEF cubes and tomatoes.
3. Bring to a boil; stir in spaghetti, zucchini, and beans.
4. Cook 10 minutes until spaghetti is tender but firm, stir occasionally.
