Mo' Beef Goulash Soup

Serves: 4-6
Cooking Time:  35 - 40 minutes

Ingredients:

2 packages

MO' BEEF VEGGIE BURGER, chopped into cubes

1

onion, chopped

1-1/2 cups

sliced mushrooms (about 4 oz / 125 g)

Half

sweet green pepper, chopped

1 tbsp.

paprika

2 tsp.

caraway seeds, crushed

1 tsp.

each dried basil and marjoram

1/4 tsp.

each salt and pepper

3-1/2 cups

vegetable stock

1

can (10 oz/284 ml) stewed tomatoes

2 cups

diced peeled potatoes

1 cup

chopped carrots

1/2 cup

chopped zucchini

1/2 cup

corn kernels


Preparation:
1. In a large saucepan or a Dutch oven, cook the chopped MO' BEEF over medium-heat for about 5 minutes. Add onion, mushrooms and green pepper; cook, stirring occasionally, for 6 - 8 minutes or until onion is softened.

2. Reduce heat to low; stir in paprika, caraway seeds, basil, marjoram, salt and pepper. Cover and cook, stirring occasionally, for 10 minutes.

3. Add vegetable stock, tomatoes, potatoes and carrots; bring to boil. Reduce heat to medium-low; cover and simmer for 15 minutes.

4. Stir in zucchini and corn; cover and cook for 5 to 10 minutes or until vegetables are tender.
